    Warm the oil in a large pan and sauté the onion for 8-10 minutes until it begins to caramelize (or longer if you can, as it will become sweeter). Add the garlic during the last 2 minutes of the cooking time.

    Add the mixed vegetables, tomatoes, capers, and raisins. Season generously and let simmer uncovered for 10 minutes, or until a rich sauce forms.

    In the meantime, bring a kettle of water to a boil. Empty the boiled water into a large pot, add a pinch of salt, and bring it back to a boil. Cook the pasta until it's al dente, then drain it while saving some of the pasta water. Transfer the pasta into the sauce, adding a splash of the reserved pasta water if it's too thick. Garnish with basil leaves and Parmesan, if desired, and serve directly from the pan.
