  1. Step 1

    For the salsa, mix together the red onions, tomatoes, vinegar, half of the parsley, and half of the oil, and then season according to your preference. Coat the avocado slices with a bit of lime juice, and put them aside.

    In a non-stick pan, warm the remaining oil over medium-high heat and sauté the onions for 5 mins. Add the grated carrot and mushrooms, cooking for an additional 3-5 mins until lightly browned. Blend in the tomato purée and spices, continuing to cook for 3-5 mins until the purée darkens to a deep red. Add 200ml water, the kidney beans, corn, and remaining parsley, cooking for 5-6 mins until the mixture reduces, thickens, and is thoroughly heated. Adjust the seasoning with cayenne pepper, salt, and pepper to your preference.
  3. Step 3

    Heat the tortillas according to the package directions and warm the rice until it's steaming hot. To assemble the burritos, place lettuce, vegetable filling, and rice on each tortilla. Add avocado slices and soured cream, then fold in one side of the tortillas and roll them up. Serve warm alongside the salsa.
