    In a large wok, karahi, or non-stick frying pan, melt the butter over medium-high heat. Cook the mushrooms for 10 minutes, or until their moisture evaporates and they begin to brown. Move the mushrooms to a bowl and set aside.

    Warm up the oil in the same pan over medium-high heat, then sauté the cumin and fennel seeds, stirring constantly for about 30 seconds until they emit a nutty aroma. Mix in the onion and cook for 12-15 mins until it turns golden. Lower the heat to medium, add the garlic, and fry for 1 min. Incorporate the ginger, turmeric, chili powder, and garam masala, then add the tomatoes and sugar. Cook, uncovered, for 5-7 mins or until the masala thickens and a layer of oil appears at the pan's edge.

    Transfer the yogurt to a small bowl, add a little ladle of the hot masala, and mix thoroughly before incorporating the yogurt into the pan of masala. Add in 100ml of hot water and let simmer for 3-4 minutes until the curry thickens to the consistency of double cream. Adjust the seasoning to your liking, then add the mushrooms back to the pan and stir to heat them through. Garnish with chopped coriander and serve with boiled rice or naan, if desired.
