    Warm the oil in a large skillet. Sauté the onions and carrots for 5-8 minutes until they become soft—add a little water if they begin to stick. Add the chili powder and cook for an additional minute. Stir in the tomatoes and pulses and bring to a boil. Reduce the heat and let it simmer for 5-10 minutes, stirring now and then, until it thickens. Take off the heat and season generously.

    Preheat the grill on high. Cover the bottom of a large ovenproof dish with a spoonful of the bean chili. On a board, lay out each tortilla, fill them with a few tablespoons of the chili mixture, fold in the ends, and roll tightly to close. Arrange them in the ovenproof dish and then spread the remaining chili on top.
  3. Step 3

    Combine the yogurt and grated cheese with a bit of seasoning, then spoon over the enchiladas. Grill for a few minutes until the top is golden and bubbling. Serve alongside a green salad.
