    Place the kale onto the vegetable tray, scatter the seeds on top, and put it back in the oven for 10 minutes.

    For the dressing, combine the tahini and the remaining oil with the vinegar, garlic, and 2 tablespoons of water.

    Preheat the oven to 200C/180C fan/gas 6. Place the squash and onions on a large baking sheet and drizzle them with 1 tsp of the oil. Arrange evenly, then season with the paprika, cumin, and thyme. Roast for 30 minutes.
  4. Step 4

    In the meantime, prepare the quinoa as per the package instructions, then ensure it is well drained (otherwise, the salad base will end up too moist).
  5. Step 5

    Place the quinoa in a bowl and mix it with the lentils or beans. Transfer half into a salad bowl and distribute the remaining half into two lunchboxes or bowls, if you're adhering to the Healthy Diet Plan. Layer the vegetables on top, drizzle with the dressing, sprinkle the pomegranate seeds, and finish with the rocket. Refrigerate the other two portions for the following day. It will stay fresh in the fridge for up to three days.
