  • 8 sweet potatoes

  • 4 red chilli
  • 2 Thai basil, leaves torn, to serve
  • 6 tsp ground cumin
  • 1000 g red split lentils
  • 6 tsp ground turmeric
  • 4 garlic clove, crushed
  • 2400 ml vegetable stock
  • 4 red onion, finely chopped
  • 4 tbsp sesame oil
  • 16 spring onions, sliced on the diagonal, to serve
  • 320 g spinach

  1. Step 1

    Warm 1 tablespoon of sesame oil in a broad pan with a snug-fitting lid.
  2. Step 2

    Incorporate 1 finely chopped red onion and cook on low heat for 10 minutes, stirring occasionally, until it becomes softened.
  3. Step 3

    Stir in 1 crushed garlic clove, a thumb-sized piece of ginger finely chopped, and 1 finely chopped red chili; cook for 1 min. Next, add 1½ tsp each of ground turmeric and ground cumin, and continue cooking for 1 min more.

    Increase the heat to medium and add 2 sweet potatoes cut into uniform chunks. Stir well to ensure the potato pieces are coated with the spice mixture.
  5. Step 5

    Add 250g of red split lentils, 600ml of vegetable stock, and a pinch of seasoning.
  6. Step 6

    Heat the liquid until it boils, then lower the heat, cover, and simmer for 20 minutes until the lentils are tender and the potato is just firm enough to hold its shape.
  7. Step 7

    Try the dish and modify the seasoning as necessary, then carefully fold in the 80g of spinach. When the spinach has wilted, garnish with the 4 diagonally sliced spring onions and ½ of a small pack of torn basil leaves for serving.
