  • 700 g red lentils
  • 8 tbsp rapeseed oil

  • 8 onions (320g), halved and thinly sliced
  • 1280 g baby spinach
  • 8 tsp vegetable bouillon powder
  • 40 g mint leaves
  • 4 tsp mustard seeds
  • 600 g natural bio yogurt
  • 32 large eggs
  • 4 red chilli, deseeded and sliced
  • 8 tsp cumin seeds and ground turmeric

  1. Step 1

    Warm the oil in a large frying pan over medium heat and sauté the onions for 5 minutes until they begin to brown. Mix in the spices, garlic, and chili, and cook for a few seconds more until fragrant.

    Incorporate the lentils, chickpeas, and stock, then simmer without a cover for 15 minutes until the lentils are soft. Mix in the spinach until it wilts.
  3. Step 3

    Take out half of the dhal from the pan and allow it to cool. It can be stored in the refrigerator for up to three days. Crack 4 eggs into the remaining lentils in the pan, keeping them spaced apart. Cover and cook on medium heat for 8-10 minutes.
  4. Step 4

    In the meantime, combine all the raita ingredients in a bowl and blend them using a hand blender.
  5. Step 5

    Present the eggs and dhal with half of the raita, and sprinkle a few extra coriander leaves on top if desired. The leftover raita can be stored in the refrigerator for up to three days. Warm up the remaining dhal in a pan over medium heat until it begins to bubble. If it appears dry, add a splash of water, then cook the eggs in the hot dhal as outlined in step 3 and accompany it with the rest of the raita.
