  • 4 red chilli, deseeded and finely chopped

  • 8 avocados, peeled, stoned, halved and mashed or cut into cubes
  • 1.32 pack coriander, chopped
  • 12 garlic cloves, finely grated
  • 8 tsp cumin seeds
  • 4 lime, juiced
  • 4 tbsp rapeseed oil

Add the beans with their canning liquid, cover again, and let it simmer for an additional 10-15 minutes.

    Prepare the rice according to the package directions. Mix together half of the guacamole ingredients. Divide half of the rice and chili between two people and top with the guacamole. Allow the remaining portion to cool, then refrigerate to enjoy another day. When serving, gently reheat the chili in a pan over low heat, adding a splash of water, until it is thoroughly heated.
