    Sayur bening (Indonesian clear soup) has long been known as “makanan orang kampung” (village food) in Indonesia, because it is easily affordable, especially for lower-class people. Despite this, nowadays many people who live in big cities, even those from high society, like it.

    This clear soup is not usually eaten as an appetizer, but as part of the main meal, particularly at lunch; especially on hot days.
    Before eating, this clear soup is mixed with rice. Usually the soup is not poured too much over the rice. Then eaten in combination with other side dishes, such as tempe goreng (fried tempeh). Fried fish, fried chicken, or meat dishes are also often used as an additional dish. This is of course not for vegans.

    Of course, most Indonesians like to eat spicy. Since clear soup and fried tempeh are not spicy dishes, they are still served with sambal kecap, a typical Indonesian chili sauce with soy sauce, which also has very simple ingredients.

    Originally, vegetables such as spinach, water spinach or white cabbage were mainly used for this dish. Nowadays, green Chinese vegetables such as pak choi or choy sum can be used instead. Carrot is added more often.

    Also add tofu, then this soup is called sayur bening tahu. In this recipe Bubba Cookle has used ingredients that are easy to find in markets in Europe and typically used in western clear soups.
