Instructions

Step 1

Prepare the Chicken: In a bowl, combine the sliced chicken with the fajita seasoning, smoked paprika, ground cumin, minced garlic, lime juice, salt, and pepper. Toss to coat the chicken evenly with the seasoning mixture. Let it marinate for at least 10 minutes, or you can marinate it in the fridge for up to 4 hours for more flavour.

Step 2

Prepare the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions to the skillet. Cook, stirring occasionally, until the vegetables are tender and slightly caramelised, about 5-7 minutes. Remove the vegetables from the skillet and set them aside on a plate.

Step 3

Cook the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Add the marinated chicken slices in a single layer. Cook the chicken for about 5-6 minutes, stirring occasionally, until it is cooked through and slightly browned.

Step 4

Combine and Serve: Once the chicken is cooked, return the cooked vegetables to the skillet with the chicken. Stir everything together and cook for an additional 1-2 minutes to heat through.

Step 5

Warm Tortillas: While the chicken and vegetables are cooking, warm the flour tortillas. You can do this by wrapping them in a damp paper towel and microwaving them for 20-30 seconds, or by heating them in a dry skillet for about 30 seconds on each side.

Step 6

Serve: Serve the chicken and vegetable mixture hot with warm tortillas and optional toppings such as shredded cheese, sour cream, salsa, guacamole, chopped cilantro, and diced tomatoes.

Recipe Story

Chicken fajitas stand as a beloved dish cherished for their vibrant flavours, ease of preparation, and versatility. Originating from Tex-Mex cuisine, these sizzling delights have become a staple in households and restaurants worldwide.

The origins of fajitas trace back to the ranches of West Texas and Northern Mexico, where cattle ranchers would grill skirt steak over open flames. The word "fajita" itself comes from the Spanish word "faja," which translates to "belt" or "sash," referencing the thin strips of meat traditionally used in the dish.

Over time, the recipe evolved, with chicken becoming a popular alternative to beef due to its lighter flavour and versatility. The dish gained widespread popularity in the 1980s, thanks to the emergence of Tex-Mex cuisine in the United States, spreading to other countries and cultures and undergoing various adaptations along the way.

One of the reasons for the enduring popularity of chicken fajitas lies in their simplicity and flexibility. The basic ingredients—chicken, bell peppers, onions, and spices—are readily available and can be easily customised to suit individual tastes and dietary preferences. Whether served in tortillas as traditional fajitas, piled high on salads, or incorporated into wraps or bowls, the possibilities are endless.

Moreover, chicken fajitas cater to a wide range of dietary needs and preferences. They can be adapted to accommodate halal, gluten-free, vegan, and vegetarian diets, making them an inclusive option for diverse dining experiences.

Beyond their culinary appeal, chicken fajitas offer a healthy option without compromising on flavour. By using lean chicken breast and an assortment of fresh vegetables, the dish provides a balanced combination of protein, fibre, vitamins, and minerals, appealing to health-conscious individuals seeking nutritious and satisfying meals.

In conclusion, chicken fajitas have earned their place as a beloved culinary favourite, celebrated for their rich history, adaptability, and wholesome ingredients, making them a timeless classic enjoyed by people of all ages and backgrounds.
