For the Salsa: - 2 medium blanched and peeled tomatoes - 2 garlic cloves chopped - 2 Tbsp jalapeños chopped - 1 Tbsp fresh coriander chopped - 1 tsp salt - 1 tsp cumin powder

For the Shrimps: - 12 -15 Cleaned and deveined Jumbo/Large shrimps - 1/2 cup All Purpose Flour - 1tsp salt - 1tsp black pepper - 1 Large Egg - 1 cup of Panko breadcrumbs (You can also use toasted regular breadcrumbs instead) - 1 Tbsp dried Parsley - 1 Tbsp Shredded Parmesan cheese

Step 1

Directions: As shown in the video, in your blender cup, take your blanched tomatoes, add the 2 garlic cloves, 2Tbsp chopped Jalapenos, 1 Tbsp chopped Fresh coriander, 1tsp salt and 1tsp cumin powder and 2 Tbsp Lime Juice. Blend in bursts, and until they reach a coarse texture. After that add 2 small, chopped tomatoes and 1 small onion, chopped and blend for an additional 2 to 3 seconds. Be careful, not to over blend. Add 1 tsp of sugar and stir, your salsa is now ready to serve! In a deep plate, take the large shrimps and pat them dry with a paper towel. Season them well with salt and white pepper and set aside. For the coating, take 1/2 a cup of all-purpose flour and mix in 1 tsp of salt and 1 tsp of black pepper in it. In a separate bowl, take 1 large egg and whisk it well. In a separate plate, take 1 cup of the panko breadcrumbs and add 1 Tbsp dried parsley and 1 Tbsp shredded Parmesan cheese into the breadcrumbs. Coat each shrimp carefully one by one, coating in the flour mixture first, then the egg and finally coating it well in the breadcrumbs. Deep Fry the shrimps on medium high heat for 1 to 2 minutes or until golden brown, add fresh parsley on your shrimps and serve with fresh homemade salsa!
