Balado is a kind of hot and spicy chili sauce typical of Minangkabau, West Sumatera Province, Indonesia.
This sauce from a mixture of several spices is suitable for chicken, fried beef, (fried) boiled eggs, fried shrimp, squid, fish (whole or sliced) or vegetables (eggplant, potato, etc.).
Terong Balado (balado eggplant) is balado combined with eggplants. Before mixing, the eggplant must first be fried, baked or grilled.
That's also possible to boil the eggplant, but remember, if the eggplant absorbs a lot of the cooking water and after you mix it with the balado, the balado can become runny and watery, which in the end makes the balado tastes less hot and savory.
This dish is generally spicy or very spicy. If you don't want to eat spicy, can't or shouldn't eat spicy anymore, simply reduce the amount of red chilies for Balado; especially the little red chillies. Add more tomatoes if needed.
This dish is usually served and enjoyed with hot or warm rice. Many Indonesians use right hand to eat this food. Because they believe that food taste better eating with hands.
