    Warm the oil in a sizable pan over medium heat and sauté the peppers for 5 minutes, making sure to stir often. Introduce the garlic and spices, give it a quick stir, then pour in the passata and stock. Mix in the lentils and thyme, cover, and let it simmer for 15-20 minutes until everything is pulpy. Add the beans with their canning liquid, cover again, and let it simmer for an additional 10-15 minutes.

    Prepare the rice according to the package directions. Mix together half of the guacamole ingredients. Divide half of the rice and chili between two people and top with the guacamole. Allow the remaining portion to cool, then refrigerate to enjoy another day. When serving, gently reheat the chili in a pan over low heat, adding a splash of water, until it is thoroughly heated. Warm the rice in the microwave. Mix the remaining guacamole ingredients to prepare a fresh batch, and serve it atop the chili and rice. This will stay fresh in the refrigerator for up to four days.
